#autoimmune #dessert #glutenfree #pie Apr 08, 2023

Ingredients:

  • 1/2 cup cassava or tigernut flour
  • 1/2 cup arrowroot starch/flour
  • 1/2 cup coconut flour
  • 1/4 tsp salt
  • 1/2 cup organic palm shortening (Grain Brain is the brand I use, or you could use tallow)
  • 1/4 cup plus 1 TBSP water

To Prepare the Dough:

  • Combine the flours and salt in a bowl and mix well.
  • Cut in palm shortening to form a crumbly dough
  • Add the water mixture to the dough and mix until smooth.
  • Form the dough into a ball, wrap in plastic wrap and refrigerate 30 minutes or overnight.

To Bake the Crust

  • Preheat oven to 350
  • remove dough from the fridge and allow to sit 10-15 minutes to make it easier to roll
  • Place dough between 2 pieces of parchment paper and press down, then roll with a rolling pin to 1/4 inch thick circle.  Remove top sheet of paper and smooth edges
  • Place a 9 inch pie pan upside down on top of the dough. Carefully turn dough and pie pan right side up so dough is resting in the pie pand and parchment paper is on top.  Carefully press dough into pie plate and gently remove parchment.
  • Use your fingers to even out the edges and smooth the cracks until pie crust is fromed in pan.  Use a fork to pole holes in the bottom of the crust for even baking.
  • Bake crust 20 minutes until firm to the touch and very lightly golden brown.

.This basic recipe can be used for any pie, pot pies, fruit pies, galettes...When using for galettes or pot pie, you bake the crust with the filling according to that recipes direction.
