Apple Cider Vinegar Cake

Love the taste of fall.

These little cakes taste like the filling of apple pie without all the sugar and they are gluten free!

INGREDIENTS

  • Yellow cake mix (I used Zen Sweet Baking Vanilla Bean Cake Mix, its a gluten free, grain free sugar free mix – you will use JUST the dry mix)-you can find this mix online or at stores like TJ Maxx/Homegoods
  • ¾ cup apple cider (NOT apple juice)
  • 1 cup organic Bragg Apple Cider Vinegar DRINK
  • ¼ teaspoon cinnamon
  • ½ cup apple sauce (I used ORGANIC Apple and Butternut Squash Sauce)
  • 3 large eggs, room temperature
  • 1 tablespoon Surkin Gold brown sugar
  • 1 teaspoon vanilla

HOW TO MAKE 

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, beat the dry cake mix, apple cider, apple sauce, and eggs.
  3. Add in cinnamon (1/4 tsp), brown sugar, and vanilla to the cake mix batter.  The Batter will be watery.
  4. Pour the mixture into a well-greased AND floured cupcake tin(or use liners)
  5. Place tin on center rack and bake for 25-30 minutes.  At 25 min, test with a toothpick by sticking into the middle of the cake, if it comes out clean it is ready. Remove from heat and allow to cool on a wire rack for 20 minutes.
  6. This will make about 17 cupcakes
 
 
Serve with a small dollop of coconut cream or almond cream.  DELICIOUS.
