Avocado, Pear and Parmesan Salad

My family couldn't stop taking about this salad.  It only requires a few key ingredients and about 5 minutes.

Ingredients:

Dressing

  • 1 tablespoon white wine vinegar
  • 1tsp dijon mustard
  • 1 tsp lemon juice
  • 1.5 Tablespoon avocado oil
  • 1 scallion finely chopped
  • 1/2 tsp minced garlic
  • Salt  to taste

Place all ingredients in a mason jar, cover, shake and set aside.

Salad:

  • 2 ripe pears
  • 2 avocados
  • 6 oz organic baby spinach and baby kale
  • 2 oz crisp lettuce(any variety)
  • Juice of 1 lemon
  • 1/2 cup walnuts(omit for AI)
  • Shaved parmesan cheese to sprinkle over top (if AI, use Nutritional Yeast instead)

Thinly slice the pears and avocado and sprinkle the lemon juice over top.

Place the spinach, kale, and lettuces on a large dish.  Layer the pears and avocado over lettuce, sprinkle on the cheese, dressing and top with the walnuts.

To make this Autoimmune Friendly omit the walnuts and cheese. Instead sprinkle Nutritional Yeast over greens.
