Banana Chocolate Chip Walnut Muffin

I am not a baker.

I am not one of those moms who elaborately decorates cakes and cupcakes.  My mom was and she was awesome at it.  I remember having a Raggedy Ann cake for my 5th birthday that looked EXACTLY like her.  It was unbelievable.  

I do not possess that talent.

None the less, I do like to provide healthy options for my children when it comes to "dessert".

So here is a recipe I made from left over bananas.  They are so good.  Not too sweet( I don't really care for sweet anymore) but they hit the spot as a dessert, or they could double as breakfast.

Whats even better? Just throw everything in the bowl mash and mix and fill the tins to bake.

What you will need:

  • 3 ripe mashed bananas
  • 1/3 cup melted butter (or applesauce)
  • 1 tsp baking soda
  • pinch of salt
  • 1/4 c Surkin Gold Sugar Alternative
  • 1 large egg beaten
  • 1 tsp vanilla
  • 1.5 cups gluten free all purpose flour
  • 1/2 c chopped walnuts
  • 1/4 c mini dark chocolate chips or dark chocolate cut into small pieces

Preheat oven to 350 and cook 25-30 minutes.
