Beef Sausage Hash

This is a recipe from my Autoimmune Protocol I use with my clients.

It is a breakfast recipe, however, I also use it as a dinner recipe, make extra and have leftovers for breakfast.

 

BEEF SAUSAGE HASH

Serves 4

 

1-pound grass-fed ground beef

sea salt, to taste

2 teaspoons ground sage

1 teaspoon dried thyme

1 teaspoon dried ginger

1 teaspoon cinnamon

1 teaspoon turmeric

1 onion, thinly sliced

2 garlic cloves, chopped

1 large apple, cored and diced

1 large sweet potato, diced

1 cup shredded purple cabbage, thinly sliced

¼ cup raisins

 

Place a large sauté pan over medium heat. Once the pan is hot, add ground beef. Break up the meat with a large spoon. Season with sea salt, sage, thyme, ginger, cinnamon, and turmeric. As the meat starts to release oil, add the onion and garlic. Continue to brown for about 3 minutes. Then add chopped apple, sweet potato, and cabbage. Mix well, then cover the pan.

 

Allow the vegetables to steam for about 5 minutes. If there is not enough moisture in the pan, add about ¼ cup water.

 

Once the vegetables are soft, stir in raisins and remove the pan from the heat.
