Beef with Vegetable Stir Fry

Another great recipe to work on with your children.

My daughter made this dinner for us one night.  

We served it with a dark green leafy salad with Feta Cheese and Homemade Balsamic Dressing.  

    

For the Stir fry:

1 large head of broccoli chopped

1 medium onion chopped

1 large red pepper cut into strips

1.5-2 pounds top sirloin grass fed stir fry strips

2 teaspoons Ginger

6 Tablespoons Tamari Sauce 

4 Tablespoons Avocado oil

2 cloves/2 teaspoons mined Garlic

3 Tablespoons Beef Bone Broth or Vegetable Broth or water

2 -3 Tablespoons NON GMO Corn Starch or Arrowroot Powder/Tapioca Flour

2 Tablespoons Rice Wine Vinegar

1-2 teaspoonsMonk Fruit Sugar Alternative

Combine the Tamari Sauce, cornstarch, vinegar, and sugar in a medium bowl.  Add the sliced beef, stir to cover and refrigerate for 30 minutes.

Heat 1 TBLS oil and add the onion and pepper stirring for about  2-3 minutes until softened, transfer to a plate.  Add another TBLS oil and add the broccoli stirring for 1 minute.  Stir in 3 TBLS water or broth if using, reduce heat to mediuma nd cover the pan for 2 minutes or until broccoli is tender but still bright green and slightly crisp.  Transfer to a plate with the onions and peppers.

Increase heat to high and add the remaining 2 TBLS oil, add the garlic and ginger stir quickly for 20 seconds before adding beef.  STir constantly for 2 minutes until beef cooked through and sauce is slightly thickened.  Return veggies to the pan and ook for 1 minute or until warmed through.  Season with salt and pepper to taste.  Serve immediately .
