Black Bean Flourless Brownie Bites

Want a pick me up or just a "little something" chocolatey after dinner?  Try these Black bean brownie bites, they are delicious!

What you will need:

  • 1 can organic black beans drained and rinsed well
  • 1/2 cup gluten free oats (I like Bob's Red Mill the best)
  • 1/4 cup raw honey or organic maple syrup
  • 2 TBLS Cacao powder
  • 1/4 tsp salt
  • 1/4 cup coconut or avocado oil
  • 2 tsp vanilla
  • 1/2 tsp baking powder

place all ingredients in a food processor and blend until very smooth.  Stir in 1/4-1/2 cup chocolate chips.  

I used a silicone mini cupcake pan to make these and they came out of the pan wonderfully without having to spray it.  If you don't have silicone pans you can use a regular mini cupcake pan and line with liners, but the silicone pans have been a LIFESAVER.

Fill each mini spot about 3/4 full and press a walnut on top.

Bake in a preheated 350 degree oven for about 12-13 minutes.  I got over 30 brownie bites with this recipe!
