Brussel Sprouts with Bacon and Balsamic Reduction

Sounds fancy I know but super simple to make, especially with an air fryer. But don't worry, if you don't have an air fryer you can roast in the oven.

Ingredients:

  • 1.5 pounds of brussel sprouts washed, ends cut off and sliced in half
  • 1-2 Tablespoons of EVOO
  • salt and pepper to taste
  • 4-5 slices of nitrite free bacon, cooked crisply and chopped.  (I used Garrett Valley Paleo Approved bacon.)
  • 1/2 cup balsamic vinegar
  • 2 tablespoons Surkin Gold/Swerve Brown sugar substitute (opt)

For the reduction:

place the balsamic V and sweetener if using in a small sauce pan, bring to boil and reduce heat and cook until the vinegar breaks down.  It should stick to the back of your spoon.

Toss the spouts in the Evoo and cook in airfryer until crisp or in an oven at 425 for 15-20 minutes or until crisp.  Toss in bacon and balsamic reduction.
