Cajun Foil Packs

Ever wonder what to do with the random raw vegetable you have left over in your fridge?  I know I have.  Here is what I came up with for dinner with all the left over veggies in the fridge:  

Remember, I have a family of 5 so the recipe reflects that.  Modify the recipe to fit your family size.

 

Ingredients

  • 5 chicken breast
  • a zucchini
  • 1/2 a red onion and 1/2 a sweet onion
  • 1/2  bag of broccoli
  • cherry tomatoes
  • Red pepper

Chop all the  vegetable and chicken, place in a bowl and add 3-4 tablesoons EVOO and spice mix of your choice.  here is what I used:

  • garlic powder
  • salt and pepper
  • paprika
  • cayenne pepper
  • Cajun Blackend seasoning
  • parsley

Mix everything together to coat well.  Divide mixture up onto sheets of tin foil or parchment paper.  cook at 375 until chicken cooked through, about 30 minutes.
