Chicken and Broccoli with Lime Jasmine Rice

This is a quick weeknight dinner-Whats so versatile about this dinner is, if you need more protein in your meals, add more protein.  If you add extra protein, add extra broccoli and lime juice, along with additional salt and pepper.  

Serves 4

Ingredients

  • 1.5 pound boneless skinless chicken breast chopped into inch size pieces
  • 6 cups broccoli florets
  • 2-3 Tablespoons fresh lime juice
  • 1/2 tsp parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 bag of pre-cooked cilantro lime Jasmine Rice(I use the brand Carolina)

Directions

  • Place the chopped up chicken and broccoli in a bowl and toss with the line juice, parsley, salt and pepper
  • Transfer mixture to a large baking sheet
  • Cook at 375 until  chicken no longer pink-30-35 minutes, but check sooner, if the chicken pieces are small they cook faster.
  • Before chicken and broccoli done cooking, heat the rice.
  • Once chicken is done, dived the rice into 4 bowls and cover with the chicken broccoli mixture.
