Chicken Sausage "Stir Fry"

I LOVE to make nutritious meals, but don't want to spend a lot of time in the kitchen, especially on weeknights. 

Here is a recipe that I prepped the veggies and meat for on Sunday, and Monday all I had to do was throw it all in a pan and cook the pasta.

This recipe serves 4, here is what you will need:

Ingredients:

  • 2 cups uncooked Organic Brown Rice Fusili (or use any gluten free pasta not made from corn or lentil). Jovial makes a cassava pasta that is AI friendly.
  • 16 ounces of Low Fat Chicken Sausage(I recommend Dietz and Watson organic nitrite/nitrate free links, 2 packages) 
  • 2 cups cubed zucchini
  • 1 cup broccoli(my family said to put more in next time, there wasn't enough)
  • 1/4 c minced red onion
  • 1 tablespoon crushed garlic
  • 1/4 tsp Himalayan Pink Salt
  • 1/8 tsp black pepper

Directions

  • Prepare pasta according to box directions, when it is done, drain and set aside
  • Cut the chicken sausage into 1 inch pieces
  • Preheat a large nonstick skillet. Add 1 TBLS of water and stir in the sausage, onion and garlic
  • Cook on medium heat until lightly browned
  • Add the zucchini, broccoli, salt and pepper and cook until veggies are crisp tender, about 3-5 minutes.
  • Add the past to the skillet and toss until warmed through.
  • Serve immediately
