Coconut Flour Banana Muffins

This is a wonderful "base" recipe.  

If you are AIP  this recipe is compliant with a few tweaks. I will share them here:

Makes 11 muffins

Ingredients

  • 3 ripe bananas mashed
  • For strictly AIP use 3/4 cup unsweetened applesauce(1/4 cup applesauce per egg) if not following AIP  you can use eggs/flax eggs see below.
  • 3 eggs(at room temp.)
  • OR 1 egg at room temperature plus 2 flax egg (1 TBSP ground flax mixed with 2 TBSP water=1 egg, let sit for 5 minutes.)
  • OR  you can use all flax eggs: 3 TBSP flax meal plus 6 TBSP water. Let sit for 5 minutes. Can use this with AIP
  • 1/4 cup coconut oil softened (if your diet allows, can use 1/4 cup nut butter or sunflower butter)
  • 1/4 cup maple syrup
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • Opt: if diet allows. 1/2 cup chopped walnuts or pecans, or 1/2 cup dark unsweetened chocolate chips,  or pepitas.

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. Line muffin pan with baking cups. Set aside. 
  2. In a large bowl, mash bananas with a whisk until smooth. Add eggs (whichever kind you use, or the applesauce) and whisk well until smooth. 
  3. Add coconut oil and maple syrup and whisk again to make sure all is combined. 
  4. Add coconut flour, baking powder, cinnamon, vanilla, and salt. Whisk until evenly combined. 
  5. (opt)Fold in any optional ingredients you may have used at this time. 

Spoon batter evenly into the prepared muffin liners. Top with chopped nuts or seeds if desired. Bake for 18 minutes for mini muffins or 25 minutes for regular muffins or until toothpick comes out clean.
