Cold Quinoa Salad

This is another favorite batch lunch I make Sunday and have for the week.  You can add left over protein to the dish for a well rounded, nutrient packed lunch.

Makes 4-6 servings.

Ingredients:

  • 1/2 cup fresh lemon juice
  • 2 cups dry quinoa
  • 1 red and yellow pepper diced
  • 1 zucchini diced
  • 1 yellow squash diced
  • 1/4 a small red onion diced diced
  • 4-5 scallions chopped
  • 24 kalamata olived chopped
  • 1 seedless cucumber chopped
  • 1 cup fresh parsley chopped
  • 4 cups of water
  • 1/4 cup EVOO
  • 2 tsp salt
  • 1 package Feta cheese(if you can have dairy. It's really good without it too)

Directions:

Cook the quinoa  in the water according to directions, set aside

Mix EVOO, lemon juice, salt and pepper in a large mixing bowl until combined.

Spoon in the cooked quinoa and toss to coat well.

Finally add in the remaining vegetables, Feta if using, and parsley, toss to mix well, chill in the fridge.
