Collagen Sweet Potato Toast

This is an easy meal prep recipe for breakfast.

Cook several sweet potatoes at once for breakfast a couple days during your week.  Just quickly reheat the potato and cover with mashed avocado and collagen.  I used 2 scoops collagen.

Collagen Sweet Potato Toast

Serves 1

1 small sweet potato

1 tsp tallow or coconut oil
1 small avocado

Juice of 1⁄4 lemon Sea salt

Pinch dried oregano
1-2 scoop collagen powder

Heat your oven’s broiler. Wash and scrub the sweet potato skin well. Slice the potato into 1⁄4” inch thick slices.

Place slices on a small baking sheet, rub all sides with the tallow, then arrange them in an even layer. Place the pan about 6” from the broiler, then cook for 6 minutes or until caramelized. Flip the toast over, then broil another 6 minutes or until caramelized.

Meanwhile, mash the avocado, lemon juice, salt, oregano, and collagen together in a small bowl. Spread the mash on top of the toasted sweet potato slices and enjoy!

Want a little extra protein and fat?  Add 1-2 slices cooked and crumbled bacon to the top. YUM!
