Dairy Free Potato Soup

I love potato soup but traditional potato soup doesn't love me...too much dairy.  Here is my recipe for potato soup adapted from The Body Ecology Diet.

Ingredients:

  • 1⁄2 cup butter
    4-6 cloves of garlic minced
  • 1 onion dice
  • 1 tsp thyme
  • 2 bay leaves
    1 leek halved and sliced
    3 stalks celery diced
  • 7 Medium to large Red Skin Potatoes
    6 cups of water
    1 TBLS Pink Himalayan salt

Instructions:

In a soup pot, melt the butter and sautee the onion with thyme, bay leaves and garlic until the onion is translucent.
Add the potatoes, celery, leeks, water 
Simmer until the potatoes are tender(about 20 minutes)

IN the last 10 minutes of cooking add the salt.

Remove the Bay Leaves and using an immersion blender puree the soup but leave some of the potatoes and leeks chunky. If you don’t have an immersion blender, scoop out 1⁄2 of soup and put in blender and puree, return it to the pot and stir. Season with more salt and pepper if desired.
