Sunday Beef Stew

A favorite winter meal, or really anytime I need something fast that can cook all day. My go to is "stew".  I say "stew" because I don't make a roux to thicken it up.  

Here is the recipe I use to make this one pot wonder:

  • 2 pounds grass fed lean sirloin or stew meat
  • 5-6 carrots chopped
  • Handful of brussell sprouts halved
  • 3 stalks organic celery chopped
  • 4 small red skin potatoes or a small sweet potato.  (Yes, sometimes I have sweet potato in my stew instead of the red skins. Along with the Brussell sprouts it's delicious)
  • 1 onion chopped
  • 1 tablespoon Worchestershire Sauce
  • 3/4 teaspoon each thyme, basil, sprinkle of black pepper, sea salt and 1 bay leaf
  • 2 cartons Organic Beef Bone Broth

Place all vegetables,  meat, and spices in the crock pot, cover with 4-8 cups of Organic Beef Bone Broth and cook on low for 8 hours.

Now, if you want to thicken it up, before serving, remove the beef and veggies from crock pot, keep warm.  Increase crock pot to high and blend 1/2 cup water with 1/2 cup arrowroot powder in a small bowl until smooth.  Add 1/2 cup crock pot liquid mix well then ad back into the crock pot and cook for 15 minutes until thickened.  Add meat and veggies back to pot, turn to low and serve.

This is what the stew looks like before cooking it.  I do not have an after picture as of this writing because by the time I got home, it was almost gone.
