French Potato Salad

I have never liked potato salad, I do not like mayo or cold potatoes.

This is a recipe I do like and would proudly make to take to any summer picnic.

Serves 4

Ingredients:

  • 1.5 pounds red skin potatoes
  • 3 TBSP red wine vinegar
  • 1.5 TBSP olive oil
  • 1 TBSP Dijon mustard
  • 1 TBSP fresh tarragon or parsley
  • 1 TBSP fresh green onions or chives
  • Salt and Pepper

Directions:

  • Place the potatoes in a large saucepan of cold water
  • Bring to a boil, reduce heat and simmer for about 20 minutes or until tender
  • Drain, reserving 1/2 cup of the liquid
  • Transfer potatoes to a large serving bowl
  • Sprinkle warm potatoes with half of the red wine vinegar.
  • Set aside until cool enough to handle. Quarter the potatoes.
  • Whisk together the remaining vinegar, olive oil, green onions/chives, and mustard in a small bowl
  • Pour over the  quartered potatoes and toss to coat.
  • Moisten with the reserved cooking liquid if necessary.  
  • Stir in tarragon and parsley and season with salt and pepper.
  • Serve warm or at room temperature.
