Gluten Free Pancakes

Great for breakfast or dinner.

 What you will need:

  • 1 and ¼ cup Bob’s Red Mill Gluten Free Flour 1:1 Baking
  • 1 tablespoon surkin gold or coconut sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

 

Mix to combine then make the wet ingredients:

 

  • 1 egg
  • 1 cup unsweetened non dairy milk with 1 teaspoon apple cider vinegar add and mixed then let sit for 5 minutes (this is a substitute for buttermilk)
  • ¼ cup oil: avocado or melted coconut oil
  • 1 teaspoon plus vanilla
  • Optional 1 cup or more of fresh blueberries.  

 

Mix to combine then add to dry ingredients.

 

Use approximately ¼ cup of batter for each pancake.  Cook on a hot griddle for 2-3 minutes or until bubbles form, flip and cook until cooked through.   Made with blueberries is a favorite weekend breakfast in our house!
