Jambalaya & Cooking with Cam

I love one pot recipes.  

Every kitchen should have a crockpot.  

I believe crock pots have gotten a bad wrap.  Maybe it's because many of the crock pot books out there use less than ideal ingredients, like "Cam%$%ls" cream of (fill in the blank) soup.  

If you have food allergies, chronic health problems, or just want to eat healthy and be able to lose weight or maintain a healthy weight, those recipes are not for you.

Here's one that you can make with confidence and it is very versatile.  If you don't want to use shrimp or seafood don't.  You can make this as spicy or as tame as you want.  Your choice.  

Here is the recipe:

  • 1 pound turkey sausage or  1/2 pound chicken chorizo which is what you see in the picture
  • 1 pound chicken breast or 1.5 chicken breast if you only use 1/2 pound sausage/chorizo
  • 1/2 pound cooked shrimp
  • 1 green pepper
  • 1 sweet onion
  • 2 stalks of celery
  • 2.5 cups chicken bone broth
  • 8 ounces tomato sauce
  • 1 can fire roasted tomatoes ( I was out so I improvised with a jar of salsa)
  • 4 cloves of garlic or 4 teaspoons minced
  • 2 bay leaves
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper or to taste (omit if doing AIP elimination)
  • 1.5 tablespoons smoked paprika
  • 1 teaspoon salt
  • 1-2 cups pre made brown rice ( or used frozen riced cauliflower) Can use fresh riced cauliflower, you would add this to the pot with the other veggies to cook all day

Chop all ingredients into bite size pieces and place in crock pot EXCEPT for the shrimp and cauliflower/rice, save that for the last few minutes of cooking.  

Today Cam helped me to prepare this meal. He really enjoys cooking and this is a great time to teach your children the importance of ingredients, nutrition and HOW to use a knife.  Today Cam learned the easiest way to chop celery, peppers and onions. 

                             

Mix ingredients together and cook on low 4-5 hours.  In the last 15-30 minutes place the shrimp in the crock pot to warm up and add either fresh parsley or dried, to taste.

Now typical Jambalaya has rice.  Since I eat lower carb, I do not add rice to my crock pot but I do cook some for my family and they can place the amount they would like in their bowl and cover with the jambalaya.  

This is a great comfort food meal.
