Maple Carrots

This side dish is so good, you will want to double the recipe.

This recipe serves 4

Ingredients:

  • 1 TBSP unsalted butter
  • 6 medium carrots peeled and sliced
  • 2/3 cup low salt organic chicken or vegetable broth
  • 2 TBSP pure maple syrup
  • Salt and ground pepper

Directions

  • Melt the butter in a large skillet over medium heat
  • Add the carrots and cook stirring occasionally for 5 minutes
  • Add the broth, maple syrup, salt and pepper to taste
  • Cover the pan and reduce heat to low. Simmer for 15-20 minutes or until carrots are tender.
  • Uncover, increase heat to medium-high, and cook for 2-3 minutes or until sauce reduces by salf.  Season with salt and pepper to taste and serve warm.
