Maple "Donuts"

This recipe was made on a whim as I had some left over Birch Benders Paleo Pancake and Waffle Mix.  I don't own a donut pan so I substituted a mini muffin silicone pan.  My kids loved these and will now have to be in the Sunday Morning Breakfast Rotation.  *recipe adapted from birchbenders.com.  The "donuts" didn't last long enough to take a picture!
Ingredients
1/4 cup Birch Benders paleo Pancake and Waffle mix
1/4 cup Bob's Red Mill Paleo flour
1 tsp baking powder
1 tbs surkin gold sugar alternative
1 mashed banana
2 tbs egg whites (about 1 large egg needed)
2 tbs water
1 sprinkle cinnamon

Directions

  1. Preheat oven to 350ºF.
  2. Mix all ingredients together and pour into a doughnut pan.  I used a mini cupcake silicone pan
  3. Bake for 13-15 minutes.
  4.  Drizzle with Maple Butter (1 TBLS melted butter, 1/2-1 TBLS Organic Maple syrup mixed together)
