Meatloaf Dinner

When I was kid, we had meatloaf frequently.  I didn't like meatloaf.  My mom is a great cook but I did not like meatloaf, I don't know why.  

As an adult, I avoided the meal, eating it, making it etc. Then I came across this recipe from "Clean Food Crush".  I decided to give it a try and modify it for my Autoimmune Protocol.  Now this isn't the EXACT recipe from that book but it is still delicious and I actually will eat this, and so does my family.  As a matter of fact, they all LOVE this meatloaf.

Here is what you will need for the recipe:

2 pounds lean ground beef or turkey or a mixture of the 2( I used 93% for this loaf)

1/4 cup beef broth (I used chicken broth it is all I had)

1/4 cup plus 1 tablespoon Nutritional Yeast

1/4 teaspoon garlic powder

1/4 tsp onion powder

(or you can use 1/2 cup chopped onion and a clove of minced garlic

1 tsp salt

pepper to taste

For Glaze mix the following together and drizzle over top of load before baking.

2 Tsp balsamic vinegar

1 tsp Worchestershire Sauce

1-2 tsp Dijon mustard to taste

Preheat oven to 350 degrees

In a large bowl mix the first 6 ingredients together and place in a glass loaf pan lined with parchment paper.

Cover with the glaze and cook for an hour.

 Now with this meal, about 1/2 hour before we eat I will roast Broccoli and Cauliflower and bake some Red Skin Potatoes(or sweet potatoes-they are AI approved) to have with the meat.  I prep it all before hand because by dinner time Sunday I don't want to do anything else. This way all I have to do is throw it all in the oven to roast and then enjoy the fruits of my labor.
