Orange Chicken Salad

Ingredients:

  • 2-3 very large navel oranges or 4 small/average size navel oranges
  • 1 small red onion sliced
  • 1/2 seedless cucumber for the summer version of the salad
  • 4 boneless skinless chicken breast
  • 1 package of organic baby spinach or kale
  • 2  package organic green leaf lettuce
  • 1 Seedless cucumber(for the summer version of this dish)
  • 1/4 cup EVOO
  • 1 tablespoon raw honey
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon each salt and pepper

Directions:

  • squeeze all the juice of one large or 2 small oranges into a bowl
  • add 3 tablespoons of EVOO, 1 tablespoon raw honey, 2 tablespoons apple cider vinegar, salt and pepper to the juiced orange and whisk until well blended.
  • Spoon about 5 tablespoons of liquid into a ziplock bag and add chicken and marinade for 15 minutes or up to 2 hours.  Reserve the remaining liquid.
  • Slice the remaining orange and place in a bowl
  • Heat a grill pan over medium high heat with a little bit of EVOO and cook the chicken until done all the way through.
  • While chicken cooking, in  another pan cook the sliced onions until soft, add remaining juice to onions and sautee 1 minute, remove and add the sliced oranges.

**Summer version: Do not cook the oranges or onions. Grill the chicken.  Prep the spinach or kale by adding 1 tsp of EVOO to the greens and tossing it. Set aside.  Cut up 1/2 a large seedless cucumber and the remaining oranges.  Evenly distribute the spinach/kale among 4 plates, top with the organic green leafies and sprinkle with the reserved liquid of the orange "dressing".   Place the cucumber and orange mix along with a cooked chicken breast on top and serve.

To serve:

  • Evenly distribute the spinach and green leaf lettuce between 4 plates
  • Evenly distribute the onion mix over the greens
  • Place the chicken on top
  • Drizzle any remaining orange juice liquid over top and eat!
