Paleo Pie Crust

So my baking prowess is not so good.  I have perfected the paleo, keto, GF, Dairy free, low carb chocolate chip cookie and zucchini brownie but that is about it.

This recipe I am going to share with you today is adapted from a book I bought several years ago called Paleo Desserts.  

I have never made a pie crust, well I have but they never came out right.  This pie crust was delicious an now I look forward to trying it in my chicken pot pie recipe.  

To get right to it, here is the list of ingredients:

  • 1/2 cup almond flour
  • 1/2 cup coconut flout
  • 1/2 cup Arrowroot flour/starch
  • 1/4 tsp salt
  • 1/2 cup Palm shortening
  • 1 egg white
  • 1/4 c water

Mix the first 4 ingredients in a medium bowl then cut in shortening using forks until dry and crumbly

  • 1/2 cup Palm Shortening

I used Grain Brain Organic Palm Shortening which I bought on amazon

In a small bowl whisk

  • 1 egg white
  • 1/4 cup water

Add to dough mixture and mix until smooth.

Form the dough into a ball, wrap it in plastic wrap and refrigerate 30 minutes or overnight.

To bake the crust preheat the oven to 350 degrees

Remove dough from fridge and allow it to sit out at room temp 10-15 minutes.

When ready, place dough between 2 pieces of parchment paper.  Press dough down slightly and then use a rolling pin to roll dough into a 1/4 inch thick circle.  Remove the top sheet of parchment paper and smooth the edges to even them out.

Place a 9 inch pan upside down on top of the dough, so dough is resting in the pie pan and the sheet of parchment paper is on top. Carefully press dough into the pie pan and gently remove parchment paper.

Use your fingers to even out the edges and smooth the cracks until the pie crust is formed in the pan.  Use a  fork to poke holes in the bottom of the crust for even baking.

Bake crust 20 minutes until firm to the touch and very lightly golden on the edges.

Allow the crust to cool completely before filling.

**some recipes require you to bake the pie crust and filling at the same time such as the chicken pot pie and apple gallette recipes.
