Super simple and delicious sugar cookie

Makes 12-14 cookies

Ingredients

  • 3/4 cup cassava flour or Paleo Blend Flour by Bob's Red Mill
  • 1/3 cup PLUS 4 Tablespoons arrowroot or tapioca flour
  • 1 Tablespoon Coconut flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2 tsp vanilla

Directions

Prepare dough:

  1. Combine all the dry ingredients in a medium bowl and combine
  2. Combine oil, maple syrup and vanilla in small bowl
  3. Add wet ingredients to the dry ingredients and stir well to completely combine
  4. Place dough between 2 pieces of parchment paper and roll out to 1/4 inch thickness. 
  5. Place dough in freezer for 30 minutes

To Bake

  1. Preheat oven to 350
  2. LIne baking sheet with parchment
  3. When dough is set (30 minutes), remove from freezer and work wuickly using cookie cutters to cut out shapes and using spatula transfer to baking sheet
  4. Re Roll dough scraps and re freeze 5-10 minutes if needed.  Repeat cutting process with remaining dough.
  5. When ready, cook for 10-12 minutes or until golden around the edges.
  6. Allow cookies to cool before serving or decorating.
