Pumpkin Spice Breakfast Bowl

Makes 2 large or 4 small servings 

Ingredients

2 large ripe bananas
1 teaspoon ginger powder
1 14-ounce can pumpkin pureฬe 1 cup coconut milk
2⁄3 cup water
1⁄4 cup coconut flour
1 teaspoon cinnamon
sea salt, to taste
2 apples, chopped (opt)

Add ripe bananas to a medium-sized pot. Use a fork to mash the bananas, then add ginger powder, pumpkin puree, coconut milk, water, coconut flour, cinnamon, and sea salt. Turn on the heat to medium/low. Use a fork to mix as the mixture warms up. Continue to stir for about 10 minutes. If the mixture is dry, add more coconut milk or water. Serve in two bowls topped with chopped apple.

*Serve with bacon or sausage, if you need added protein. Or stir in unflavored collagen powder before eating.
