Quinoa Vegetable Soup

Quinoa soup.

Yummy comfort food for the cold winter.

Ingredients:

  • large onion chopped
  • 5 cloves of minced garlic
  • 2 tablespoons EVOO
  • 3 carrots
  • 2 stalks of celery
  • 1 red bell pepper
  •  1 yellow squash,
  • 1 zucchini
  • 2 red skin potatoes
  • 3 cups butternut squash
  • fresh cilantro, use the whole bunch
  • 1 cup uncooked quinoa
  • 6 cups water and 1-2 cups low sodium organic vegetable stock(optional, can add all water and it is still tasty)
  • Parsley, sea sesonings, salt to taste.
  • Frozen peas(opt)

Directions:

Saute a large onion, chopped with 5 cloves of garlic in 2 tablespoons of EVOO.

Chop all the veggies and add to the pot.

Add fresh or dried parsely,  fresh cilantro, 1tsp sea vegetable seasoning, 1 cup quinoa, 6 cups water and 1-2 cups organic vegetable low sodium(or just use all water) simmer until tender

Add Himilayan sea salt or Herbamare the last few minutes of cooking 

When veggies are tender, use an immersion blender and blend, leaving some chunks of veggies. Add 1 cup frozen peas, cook until heated through.
