Gluten Free Snickerdoodles

I don't bake much.  Chocolate chip cookies is pretty much the extent of my baking.  I thought I would try something different.  

These flew off the shelf.  My kids loved them.  They are gluten free, "sugar free", and delicious.

Ingredients:

  • 2 and 1/4 cup Bob's 1 for 1 gluten free flour
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup monk fruit or swerve sugar alternative
  • 1/2 cup butter
  • 1 tsp vanilla
  • 2 eggs

for rolling

  • 2 Tbls monk fruit or swerve sugar alternative
  • 1/2 tsp cinnamon

Instructions:

  1.  beat the sugar, butter, vanilla and eggs until well combined
  2. add the dry ingredients and mix on low until well combined. Do not overmix
  3. Cover the dough and place in fridge to chill for an hour or up to 2 days
  4. When ready, remove from fridge to soften until it is easy to roll
  5. Preheat oven to 400, line baking sheet with parchment paper
  6. Roll dough into 1 inch balls, roll in the cinnamon/sugar mixture
  7. Bake 8 minute and then flatten with the bottom of a glass and bake 1-2 more minutes until bottom golden brown.
  8. Let cool on a cooling rack.
  9. Store in airtight container.  I placed mine in the fridge.
