Spaghetti Squash Burrito Bowls

Love Chipotle but hate the carbs and calories and bloat from eating "fast food"?  Well here is the solution: Spaghetti Squash Burrito Bowls.  Tasted like a burrito bowl without all the carbs, bloat, and calories.

This will make 2 servings. I doubled the recipe for my family of 5.

What you will need:

  • 1 spaghetti squash halve and seeded
  • 2 tablespoons EVOO
  • salt and pepper to taste.

Heat oven to 375.  Brush the insides of the halved squash with the olive oil and salt and pepper.  Place cut side down on baking sheet and bake for about 40 minutes or until squash is fork tender.  Scrape out the the insides and divide into to bowls.

For the Slaw:

  • 1 cup purple cabbage roughly chopped
  • 1 can organic black beans rinsed and drained
  • 1 red bell pepper chopped
  • 1/3 cup green onio s chopped
  • 1/3 cup fresh cilantro chopped
  • 2-3 tablespoons fresh lime juice
  • 1 teaspoon EVOO
  • 1/4 teaspoon salt

Mix all the about together and divide between the 2 bowls

For the Avocado:

  • 1 ripe avocado diced
  • 1/3 cup fresh cilantro chopped
  • 1 tablespoon fresh lime juice
  • 1 teaspoon cumin or to taste
  • 1/2 teaspoon chili powder or to taste
  • Salt to taste

Mix all the above and divide between the 2 bowls.
