Spinach Mango Salad

Another recipe I adapted from The Gluten Free Kitchen. 

This salad is great any time mangos are in season.  My youngest son helped me to make this and he wants it in the weekly dinner rotation. 

We were leery about the dressing, but it is really good on the salad, not so much on its' own.

Ingredients for Salad:

  1. 2 plus cups baby spinach
  2. 1-2 firm ripe mango(we used 1 whole one) peeled in ribbons using a peeler
  3. 1 small seedless cucumber chopped or peeled in ribbons using a peeler
  4. 1/4 cup thinly sliced red onion
  5. 1/2 cup cilantro leaves

Place all ingredients in a large bowl, pour dressing over top, mix to coat. 

Ingredients for dressing:

  1. Juice of 1 lime
  2. 1 tsp Dijon Mustard
  3. 1 Tablespoon Plain Greek Yogurt ( use plain coconut yogurt for an AI friendly meal)
  4.  1 Tablespoon EVOO

Place all ingredients in a mason jar and shake to mix. Set aside.

This was our salad:  So good I could have eaten the whole thing.
