Stuffed Bell Peppers

When I was a kid, I did not like stuffed pepper.

As an adult, I avoided eating stuffed peppers.  

I love bell peppers and lean ground beef, but I didn't like them cooked together.

THIS recipe, however, is great.  I am glad there will be leftovers for lunch.

Here is what you will need:

Ingredients:

  • 1.5 pounds 96% lean ground beef
  • 1 cup chopped red onion
  • 1 cup diced celery
  • 3 tablespoons chopped fresh cilantro
  • 3 tablespoons minced garlic
  • 1.5 tsp himalayan pink salt
  • 1/2-1 tsp ground black pepper
  • 1 tsp dried basil
  • 1 tsp Braggs Seasoning
  • 1 cup baby spinach
  • 6 red bell peppers

Directions:

  • Preheat oven to 375
  • In a large nonstick skillet over medium heat, lightly brown the beef and onion
  • Turn heat to low and add the celery, cilantro, garlic, salt, pepper, basil and Bragg's seasoning.
  • When beef completely browned, remove from heat and stir in the spinach
  • Wash each bell pepper and remove tops, core, and seeds.
  • Stuff each pepper with 1/2-2/3 c of the beef mixture
  • Put the peppers in a glass baking dish and pour 2 tablespoons  of water into the bottom of the pan.
  • Cover with foil and bake for 50 minutes.

This meal was so good! The meat was the star.  I could have eaten the whole pan.
