Sweet potato hash with a fried egg

This is a little recipe I made up with what I had left over in the fridge:

If you are doing an Autoimmune Diet, omit the eggs and opt for chicken sausage and avocado on your hash. Super good.

Ingredients:

(Serves 2)

  • 1 roasted sweet potato diced (about 1 cup)
  • 4 sliced cooked nitrite/nitrate free bacon) chopped.  Cooked but not crisp.
  • Power greens chopped
  • 2-4 eggs ( or chicken sausage and 1/2 an avocado per person)
  • Balsamic vinegar or homemade dressing

Directions

  • Heat avocado or EVOO in a skillet
  • Add the diced sweet potato and cook until they get "browned" on the outside
  • Push the potatoes to the side of the pan and add in the bacon and and render it a bit to get crispier, then push to the side with the potatoes.
  • Add in the power greens, at least 1.5 cups per person and sprinkle with a little balsamic to help it wilt, then mix the potaotes and bacon in with the wilted greens.
  • keep warm 
  • While the bacon is getting crispy, fry the eggs in a separate pan, flip, but only cook for about 10 seconds.
  • Split the hash mixture between 2 plates and cover with egg.
