Sweet Potato Muffin Recipe

I LOVE this recipe and make it any chance I get, plus they don't hang around long in my house of 5.  I got this from a neighbor of mine, but because we don't eat gluten or dairy or use regular sugar I altered her recipe a bit. (always want to give credit where credit is due, I didn't think this up myself, I just altered it.) . My kids always laugh at me because this is what I do with many recipes: "alter" them to make them user friendly for our home.  Some come out great, others, not so good. But this one is a GOOD one.

Anytime I make sweet potatoes I buy and extra to make these muffins.  A little secret though?  You could use canned pumpkin but it's not really the same.

So, let's cut to the chase, here is the recipe:

  • 1 cup Bob's Red Mill All Purpose Gluten free Flour
  • 1 cup gluten free whole oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

combine the above and then add:

  • 1 cup cooked mashed sweet potato
  • 1/2 cup coconut sugar or surkin gold
  • 1/3 cup melted coconut oil or 1/3 c apple sauce
  • 1/4 c unsweetened non dairy milk
  • 1 egg (or 2 tablespoons water) or 1 flax egg
  • 1 tsp vanilla

Mix until all ingredients moistened , fill a silicone muffin pan with equal amounts of the mixture and then sprinkle with crumble topping and bake at 400 degrees for 15-20 minutes.  I get the Surkin Gold Brown sugar substitute on amazon.  It is so delicious, I often use it in place of white sugar too and typically only use 1/2 of what the recipe calls for.

Crumble topping

  • 1/4 cup gluten free oats
  • 2 tablespoons Gluten free flour
  • 2 tablespoon coconut sugar or surkin gold
  • 1plus a bit more tablespoon melted butter
  • 1 teaspoon vanilla

combine all into a crumble and top the muffins before cooking.
