Tapioca Pudding

This is one of my in-person Autoimmune Protocol Recipes, but it is too good to keep secret: 

TAPIOCA PUDDING

Serves 12

  • cup small tapioca pearls
  • 1 cup dairy-free milk
  • 1 14-ounce can coconut milk 
  • 1⁄3 cup maple syrup
  • 1 teaspoon vanilla extract
  • pinch of sea salt

Soak the tapioca pearls in the dairy-free milk for one hour. Then, add the pearls and the milk to a saucepan over low heat. Add the remaining ingredients and simmer for 20 minutes. Serve warm or cold and top with berries.
