Thai Shrimp and Fresh Vegetable Rice

I adapted this recipe from the book Cooking for Friends.  

Serves 4

Ingredients

  •   12 ounces wild caught shrimp thawed and deveined 
  • 1red pepper sliced thin
  • 1 pound asparagus cut on the bias
  • 2 packs(3 cups) Seeds of Change Jasmine Rice already cooked
  • 1/4 cup dry roasted peanuts(omit if you cannot have peanuts)

Marinade

  • 1 lime juiced(2 Tablespoons)
  • 4 tsp Coconut Aminos 
  • 1/4 tsp ground Ginger or 1 tsp fresh grated gingerroot
  • 1-2 tsp minced garlic
  • 1 jalapeno seeded and minced

Place all ingredients in a jar, cover and shake. Set aside for shrimp

Directions

Thaw shrimp, rinse and pat dry, place in a bowl and cover with the marinade 15 minutes or up to 2 hours.  Drain shrimp and reserve the marinade 

Heat 1 tablespoon olive oil over medium -high heat.  Stir fry shrimp for about 2-3 minutes or until shrimp turns pink.  Remove from pan, cover and keep warm.

Add asparagus and red pepper to the pan, stir fry for 2-3 minutes until crisp tender.  Add reserved marinade and bring to just a boil. Stir in cooked rice and peanuts.

Transfer rice and veggies to bowls and top with shrimp.  Our results 👇
