The Best Zucchini Fries

I had a left over zucchini and no side dish planned for my steak dinner.

I decided to try zucchini fries.  I have never made then before, but they are a new favorite.  Whats cool about this recipe is you can make these spicy, italian, plain, whatever you have a taster for.

I cut up 1 zucchini into steak fry shapes

Using 3 separate bowls I had in bowl 

  1. Almond Flour
  2. (1) Egg beaten.  If you can't have eggs, mix 2-3 tablespoons of flax meal with 1 tablespoon water, let sit to thicken and use in place of egg.
  3. Braggs Nutritional Yeast with paprika, parsley, garlic powder, salt and pepper, Chili powder.  Here is where you can add different spices to change up the flavor.

Place a cooling rack over a cookie sheet and spray with cooking spray.

Working in batches, place zucchini in Almond Flour, then egg, and finally in the Nutritional yeast.  Place on the rack.  

Cook at 425 for 20-25 minutes. Until they look like the picture.  Delicious! Kid Approved.
